Nut and Seed-Veggie-Herb Spread

I cannot say enough good things about this easy recipe. You can be really creative here, use seasonal, yummy veggies, such as avocado, tomatoes, pumpkin, or blanched spinach. This one never gets boring and is easy to pack if you’re on the go. It’s a perfect spread for your bread. 

Here is what you need:

1 portion nut/seed mixture

1 portion vegetables, I used avocado and tomatoes 

salt, pepper to taste

1 tbs olive oil

1/4 tsp dried vegetable broth (Seitenbacher) or other spice mix

1 tbs freshly chopped basil or parsley

 Soak the nut/seed mixture overnight in cold water. Rinse the next day right before preparation.
Blend avocado and nut mixture, together with the salt and pepper, oil and vegetable broth or spice mix in a blender or use a hand blender.
Gently add fresh herbs, after blending.


Tip: you can make two or three servings at a time, keep refrigerated for up to 3 days, for future meals. Enjoy with your rye bread and fruit , if your Metabolic Balance® personal nutrition plan allows for it.
